Turkey & Apple Sandwich
4 slices bread
4 slices turkey
Thin apple slices
Honey mustard
To make: layer turkey and apple, drizzle with honey mustard.
Chickpea Salad Sandwich*
1 cup cooked or canned chickpeas - mashed
2 tablespoons mayonnaise
1 tablespoon chopped celery
4 slices bread
To make: mash chickpeas, mix with mayonnaise and celery, spread on bread.
If you would like a curried chickpea salad just omit the chopped celery and add 1/2 teaspoon curry powder
Sloppy Joe/Lentil Sandwich*
1/2 lb ground beef (or make lentil sloppy joes by replacing the beef with 1 cup cooked lentils)
1/2 cup tomato sauce
1 tablespoon ketchup
4 buns
To make: brown beef or cook the lentils (if you are using canned lentils be sure to drain and rinse before using.) Next add sauces, simmer, and serve on buns.
Hummus & Veggie Sandwich
4 slices bread
2 tablespoons hummus
Sliced cucumber
Tomato
Lettuce
To make: spread hummus like you would butter or margarine then layer on your veggies.
Eggplant & Hummus Pita*
1 small eggplant - roasted
2 tablespoons hummus
2 pita breads
To make: slice roasted eggplant, stuff into pita and top with hummus.
You can replace the eggplant with:
Roasted Red Peppers for a smoky, savory sandwich
Carrot Shreds for a nice crunch
Spinach Leaves for green freshness
Avocado Toast Sandwich
4 slices bread
1 avocado
salt & pepper
Lemon juice
To make: mash avocado, season, spread on toasted bread or replace the lemon juice with Everything Bagel Seasoning for a satisfying savory treat
Avocado & Tomato Sandwich
4 slices bread
1 avocado - sliced
Tomato slices
Salt & pepper
To make: layer avocado and tomato, season.
Eggplant Parmesan Sandwich
1 small eggplant - roasted and sliced
Marinara sauce
Mozzarella cheese
4 rolls
To make: layer eggplant, sauce, cheese on rolls, bake until cheese melts.
Eggplant & Tomato Sandwich
1 small eggplant – roasted and sliced
Tomato slices
4 slices bread
Mayonnaise
To make: layer eggplant and tomato, spread mayonnaise.
Chicken, Pecan, Cranberry Sandwich (this was inspired by Dollar Tree Dinners)
1 large can of chicken – drained
2 tablespoons diced onion (or more if you like)
1 handful of pecans – chopped into bite sized pieces
1 handful of dried cranberries
1/8 to 1/4 cup mayonnaise
Salt & pepper
Hamburger buns or bread
To make: mix everything together. Serve on toasted hamburger buns
