Sandwiches List 4

Sausage & Peppers Sandwich
2 sausage links – cooked and sliced or use a sausage patty - cooked
Sauteed bell peppers
4 rolls

To make: layer sausage and peppers on rolls.

Caprese Sandwich
4 slices bread
Tomato slices
Mozzarella slices
Fresh basil leaves
Balsamic vinegar

To make: layer tomato, mozzarella, basil and drizzle with balsamic.

BBQ Bean Sandwich
1 can baked beans
2 tablespoons BBQ sauce
4 hamburger buns

To make: heat beans with BBQ sauce. Spoon onto buns.

Simple Fish Sandwich
4 fish fingers or you can use any frozen type of fish (triangles or squares) - cooked
4 slices bread or hamburger buns
Optional: tartar sauce
Optional: lettuce

To make: place fish on bread or buns then layer with lettuce and tartar sauce if using.

Sweet Potato & Black Bean Wrap
1 small sweet potato – cooked and mashed
1/2 cup black beans
2 tortillas

To make: spread sweet potato and beans on tortillas and roll up.

Potato Chip Sandwich
4 slices bread
Butter or margarine
Handful of potato chips

To make: butter or margarine the bread, layer with chips, close sandwich.

Mashed Potato Sandwich 
Leftover mashed potatoes 
4 slices bread 
Butter or margarine

To make: put butter or margarine on your bread and layer with leftover mashed potatoes. This can be served cold or can be grilled.

Sardine Sandwich
1 can sardines
4 slices bread
Lettuce
Lemon juice

To make: mash sardines with lemon juice, spread on bread, add lettuce.

Corned Beef & Mustard Sandwich
4 slices bread
4 slices corned beef
Mustard

To make: layer corned beef and mustard.

Canned Corned Beef Hash Sandwich
1 can corned beef hash
4 slices bread

To make: warm hash and put it onto your bread.

Sandwiches List 3

 This is the third list in the series on sandwiches!

 

 Turkey & Apple Sandwich
4 slices bread
4 slices turkey
Thin apple slices
Honey mustard

To make: layer turkey and apple, drizzle with honey mustard.

Chickpea Salad Sandwich*
1 cup cooked or canned chickpeas - mashed
2 tablespoons mayonnaise
1 tablespoon chopped celery
4 slices bread 

To make: mash chickpeas, mix with mayonnaise and celery, spread on bread.

If you would like a curried chickpea salad just omit the chopped celery and add 1/2 teaspoon curry powder

Sloppy Joe/Lentil Sandwich*
1/2 lb ground beef (or make lentil sloppy joes by replacing the beef with 1 cup cooked lentils)
1/2 cup tomato sauce
1 tablespoon ketchup
4 buns

To make: brown beef or cook the lentils (if you are using canned lentils be sure to drain and rinse before using.) Next add sauces, simmer, and serve on buns.

Hummus & Veggie Sandwich
4 slices bread
2 tablespoons hummus
Sliced cucumber
Tomato
Lettuce

To make: spread hummus like you would butter or margarine then layer on your veggies.

Eggplant & Hummus Pita*
 1 small eggplant - roasted
2 tablespoons hummus
2 pita breads

To make: slice roasted eggplant, stuff into pita and top with hummus.

You can replace the eggplant with:
    Roasted Red Peppers for a smoky, savory sandwich
    Carrot Shreds for a nice crunch
    Spinach Leaves for green freshness

Avocado Toast Sandwich
4 slices bread
1 avocado 
salt & pepper
Lemon juice

To make: mash avocado, season, spread on toasted bread or replace the lemon juice with  Everything Bagel Seasoning for a satisfying savory treat

Avocado & Tomato Sandwich
4 slices bread
1 avocado - sliced
Tomato slices
Salt & pepper

To make: layer avocado and tomato, season.

Eggplant Parmesan Sandwich
1 small eggplant  - roasted and sliced
Marinara sauce
Mozzarella cheese
4 rolls

To make: layer eggplant, sauce, cheese on rolls, bake until cheese melts.

Eggplant & Tomato Sandwich
1 small eggplant – roasted and sliced
Tomato slices
4 slices bread
Mayonnaise

To make: layer eggplant and tomato, spread mayonnaise.

Chicken, Pecan, Cranberry Sandwich (this was inspired by Dollar Tree Dinners)
1 large can of chicken – drained
2 tablespoons diced onion (or more if you like)
1 handful of pecans – chopped into bite sized pieces
1 handful of dried cranberries
1/8 to 1/4 cup mayonnaise
Salt & pepper
Hamburger buns or bread

To make: mix everything together. Serve on toasted hamburger buns

Sandwiches List 2

 This is the sandwiches list 2. We will be a total of 60 sandwiches in all because I love lists and it helps to be able to look at a list like this and plan your menu for the week or month! I hope it works as well for you as it does me.

 

Bean & Cheese Burrito Wrap
1 cup refried beans
1/2 cup shredded cheese
4 tortillas

To make: spread beans and cheese onto your tortillas then roll them up and heat them through in a pan on your stovetop or change it up and make a quesadilla by spreading your beans and cheese between 2 tortillas and cook it in a skillet until it’s golden brown. Cut into wedges to serve.

Mushroom Melt
1 cup mushrooms - sauteed
4 slices bread
2 slices cheese

To make: layer mushrooms and cheese, grill until melted.

Bologna & Cheese Sandwich*
4 slices bread
4 slices bologna
2 slices cheese
Mustard or mayonnaise

To make: layer bologna and cheese, add condiment, close sandwich.

I love to make bologna, mayonnaise and ketchup sandwiches – no cheese! Start by toasting your bread then add mayonnaise on each piece of toast followed by ketchup (as much or as little as you like) and finally add the bologna. Close it up and eat it.

Pimento Cheese Sandwich*
1/2 cup shredded cheddar
2 tablespoons mayonnaise
1 tablespoon diced pimentos
4 slices bread

To make: mix cheese, mayonnaise, pimentos; spread on bread.

Here are a few more ideas for cheese sandwiches:
    Raw Onion - thinly sliced
    Caramelized Onions – you have cooked on your stovetop
    Green Onions – great with a sharp cheese
    Dill Pickle Slices
    Lettuce – this is simple and fresh
    Coleslaw – a creamy, crunchy combo
    Black Olives – the salty olives work great with cheese
    Pickled Beets – for an earthy, tangy sandwich

Not exactly a cheese sandwich but you could even pile some leftover macaroni and cheese between some bread and either eat it cold or grill it up for a comforting food delight.

Peanut Butter & Jelly Sandwich*
4 slices bread
Peanut butter 
Butter or margarine
Optional: jelly

To make: spread butter or margarine on a piece of bread. Add peanut butter to the margarine piece. On the other piece of bread add your jelly if you desire and combine. Or skip the peanut butter and just use jelly or jam for a sweet sandwich, great for breakfast or as a snack.

Note: you could replace the jelly with a banana that you slice thinly or you could replace the jelly with honey for a sweet sandwich. Here are a few more options to replace the jelly:
    Pretzels – for a salty crunch
    Apple Slices – sweet and crisp
    Raisins – sweet and chewy
    Chocolate Chips or Chocolate Syrup – sweet indulgence
    Honey Nut Cheerios – crunchy, sweet breakfast option
    Maple Syrup – sweet and comforting breakfast option

BLT (Bacon, Lettuce, Tomato) Sandwich
4 slices bread
4 strips bacon
Lettuce
Tomato slices
Mayonnaise

To make: cook your bacon then layer lettuce, tomato, and mayonnaise onto your bread or remove the lettuce and simply make it a bacon and tomato sandwich.

Chicken Salad Sandwich
1 cup cooked chicken – shredded or for a more budget friendly option, opt for canned chicken
2 tablespoons mayonnaise
4 slices bread
Optional: 1 tablespoon celery

To make: mix chicken, mayonnaise, celery, if  using. Spread on bread. I make this all the time without the celery.

BBQ Chicken Sandwich
1 cup cooked chicken – shredded or canned chicken for a budget friendly option
2 tablespoons BBQ sauce
4 buns – like hamburger buns

To make: mix chicken with BBQ sauce, serve on buns. This can be served hot or cold.

Chicken Caesar Wrap
1 cup cooked chicken – shredded or canned chicken for a more budget friendly option
2 tablespoons Caesar dressing
Lettuce
2 tortillas

To make: mix chicken with dressing, add lettuce, wrap in tortillas.

Turkey Cranberry Sandwich
4 slices bread
4 slices turkey
2 tablespoons cranberry sauce

To make: layer turkey and cranberry sauce on bread.

Sandwiches List 1

 We are now moving on to sandwiches. Like always the PDF file will be available for download at the end of the month. Enjoy your sandwiches or do the classic soup and sandwiches.

Tuna Salad Sandwich
1 can tuna - drained
2 tablespoons mayonnaise 
4 slices bread
Optional: 1 tablespoon chopped onion
Optional: butter or margarine

To make: mix tuna, mayonnaise, onion. Spread on bread. We often make tuna salad without the onion so if you don’t have an onion handy, try it without.

Tuna Melt
1 can tuna - drained
2 tablespoons mayonnaise
2 slices cheese
4 slices bread
Butter or margarine

To make: mix tuna and mayonnaise together before spreading it onto your bread. Add your cheese and close the sandwich up. Now butter or margarine both sides of the bread and grill it until the cheese has melted and it’s a nice golden brown.

Egg Salad Sandwich*
4 hard-boiled eggs
2 tablespoons mayonnaise
Salt & pepper
4 slices bread
Optional: 1 teaspoon sriracha to make it a spicy sriracha egg salad

To make: chop eggs, mix with mayonnaise, salt and pepper. Spread on bread.

Avocado & Egg Sandwich
1 avocado
2 hard-boiled eggs
4 slices bread
Salt & pepper

To make: slice eggs and avocado, layer on bread, season.

Grilled Cheese Sandwich
4 slices bread
2 slices cheese
Butter or margarine

To make: put butter or margarine on the outside of your bread, place cheese in between and grill until golden brown and the cheese has melted

Ham & Cheese Sandwich*
4 slices bread
4 slices ham
2 slices cheese
Optional: mustard

To make: layer ham and cheese on bread, add mustard if desired. I like to skip the cheese and use honey mustard dressing on my ham sandwiches.

We make ham and cheese bolilos using black forest ham and shredded cheddar cheese that we put on a sliced bolilo (purchased from Walmart’s Bakery) and toast them in the oven.

Turkey & Cheese Sandwich*
4 slices bread
4 slices turkey
2 slices cheese
Mayonnaise or mustard

To make: layer turkey and cheese, spread condiment.

I love turkey sandwiches! I use toasted bread, add my turkey and then pile on the cooked bacon. I generally don’t add cheese – but you could.

Pizza Sandwich
4 slices bread
Pizza sauce
Shredded mozzarella cheese
Optional: pepperoni (I like to cook my pepperonis in the microwave for 30 seconds to a minute on paper towels to remove some of the grease)

To make: spread sauce, sprinkle cheese, add pepperoni if using and grill.

Apple & Cheddar Sandwich
4 slices bread
1 apple (thinly sliced)
4 slices cheddar cheese
Butter or margarine

To make: layer apple and cheese, grill in a buttered pan until golden.

Cheese & Pickle Sandwich
4 slices bread
4 slices cheddar
2 tablespoons pickle relish or chopped pickles

To make: layer cheese and pickles.

Soup Building Formula

Now we are going to switch gears and move on to a formula on how to build a soup. This can be found on the Simple Bites website tho I did modify it slightly.

Step 1: Pick your meat. Of course this is optional. Think about chicken (probably the cheapest option), beef, fish, meatballs, steak, ham, etc.

Step 2: Pick 3-5 vegetables. Often onion and garlic will be two of those. Carrots and/or celery are also common, but you can add spinach, corn, peas, green beans, kale, potatoes, beets, tomatoes, heck just about any vegetable you desire.

Step 3: Pick your fat. This can be margarine, butter, olive oil, vegetable oil, sesame oil. Try to match your fat to the type of soup you desire. So if you want a cream soup, try butter or if you want an Italian soup maybe try olive oil.

Step 4: Pick 1-2 base liquids. You can use stock, cream, milk, tomato puree, bouillon cubes or powder or just plain water.

Step 5: Pick your spices. You can go simple like just salt and pepper or expand it to any spice, herb or seasoning blend you desire. Think about Italian seasoning, celery seed, thyme, oregano, cumin, marjoram, parsley, sage and the list goes on and on. Here is a quick simple list of spices that pair nicely with its meat counterpart:

Beef: marjoram, thyme and rosemary

Chicken: celery seed, thyme, parsley, marjoram, sage

Tomato Based: basil, fennel and oregano

Cream Based: parsley or thyme

Chili: needs chili powder and maybe cumin

Now to put together your soup, you will start by cooking your meat and sauteing your onions and garlic (and possibly some or all of your spices) in the fat you choose. Combine your cooked meat and sauteed aromatics with your base liquid (do not add cream or milk until just before serving as it will prevent curdling or splitting.) Next add your veggies you selected and the spices you didn't cook earlier. Now you will cook this for a minimum of one hour.

Note: some soups may require the use of an acid. These are things like apple cider vinegar, white vinegar, lemon or lime juice. If you wish to add it to your soups, start sparingly and increase from there. You also may want to use flavor enhancers like MSG (generally found in the spice aisle), fish sauce, soy sauce, balsamic vinegar, Worcestershire sauce, etc.
