Dinner List 7

Bean and Cheese Quesadillas
4 large flour tortillas
1 can (15 oz) refried beans or mashed black beans
1 1/2 cups shredded cheese (cheddar, Monterey Jack, etc.)
Optional: salsa, sour cream

To make: spread beans over half of each tortilla. Sprinkle cheese over beans. Fold tortillas in half. Heat a skillet over medium heat; cook quesadillas 2-3 minutes per side until golden and cheese melts. Slice and serve with salsa or sour cream if desired.

Stir-Fried Rice with Vegetables and Egg
2 cups cooked rice (preferably leftover)
2 eggs
1 cup frozen mixed vegetables
2 tablespoons soy sauce
1 tablespoon vegetable oil
2 cloves garlic, minced
Salt and pepper to taste

To make: heat oil in a large skillet or wok over medium-high heat. Add garlic; sauté for 30 seconds. Push garlic to the side; scramble eggs in the pan until just set. Add frozen vegetables; cook until heated through. Stir in cooked rice and soy sauce; cook for 3-5 minutes, stirring constantly. Season with salt and pepper.

Lentil Curry with Rice
1 cup dried lentils
1 onion, diced
2 cloves garlic, minced
1 can (14 oz) diced tomatoes
2 tablespoons curry powder
2 cups rice
2 tablespoons oil
Salt to taste

To make: cook lentils in boiling water until tender (20-25 mins); drain. Cook rice separately. In a pot, heat oil; sauté onions and garlic until soft. Add curry powder; cook for 1 minute. Stir in tomatoes and lentils; simmer for 10 minutes. Serve over rice.

Chili Con Carne (No Beans Version)
1 pound ground beef
1 onion, diced
2 cloves garlic, minced
1 can (14 oz) diced tomatoes
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper

To make: brown ground beef in a skillet; drain excess fat. Add onions and garlic; cook until soft. Stir in tomatoes, chili powder, cumin, salt, and pepper. Simmer for 15 minutes. Serve with optionally rice or bread.

Vegetable Stir-Fry with Noodles
8 ounces noodles (any type)
2 cups mixed frozen vegetables
2 tablespoons soy sauce
1 tablespoon vegetable oil
2 cloves garlic, minced

To make: cook noodles according to package; drain. Heat oil; sauté garlic until fragrant. Add vegetables; cook until tender. Toss in noodles and soy sauce; stir-fry for 2-3 minutes.
