Shepherd’s Pie (Simplified)
1 pound ground beef
1 onion, diced
2 carrots, diced
1 packet gravy mix or 1 cup beef broth
4 cups mashed potatoes
Salt and pepper

To make: Preheat the oven to 375°F. Cook beef and onions until browned; add carrots.
Prepare gravy as directed; combine with beef mixture. Spread beef mixture in a baking dish. Top with mashed potatoes. Bake for 20-25 minutes until heated through and slightly browned.

One-Pot Cheesy Ground Beef and Macaroni
1 pound ground beef
1 cup elbow macaroni
1 can (14.5 oz) diced tomatoes
2 cups beef or chicken broth
1 cup shredded cheddar cheese
1 onion, diced
2 cloves garlic, minced
Salt and pepper

To make: Brown beef with onions and garlic in a large pot. Add macaroni, tomatoes, and broth. Bring to a boil, then reduce heat and simmer, stirring occasionally, until pasta is cooked (~10 minutes). Stir in cheese until melted.

Rice and Beans with Corn and Salsa

2 cups cooked rice
1 can (15 oz) black beans, rinsed
1 cup canned corn, drained
1 cup salsa
1 teaspoon cumin
1 teaspoon chili powder
Salt to taste

To make: mix all ingredients in a bowl. Warm in the microwave or on the stovetop. Serve as a side or main dish.

Tater Tot Casserole
1 pound ground beef
1 onion, diced
1 can (10.5 oz) cream of mushroom soup
1 cup frozen mixed vegetables
1 bag (32 oz) tater tots
Salt and pepper

To make: Preheat the oven to 375°F. Cook beef and onions until browned. Mix in soup and vegetables. Spread in a baking dish. Top with tater tots. Bake for 30-35 minutes until hot and crispy.

Baked Fish with Roasted Broccoli
4 white fish fillets (tilapia, cod, etc.)
2 cups broccoli florets
2 tablespoons olive oil
1 lemon, juiced
Salt and pepper

To make: Preheat the oven to 400°F. Place fish on a baking sheet; season with salt, pepper, and lemon juice. Toss broccoli with olive oil, salt, and pepper; spread around fish. Bake for 12-15 minutes until the fish flakes easily.
